=== Braised pork with coconut and pepper=== From Will and Mai Cook **INGREDIENTS** * 1 lb fatty pork (shoulder or belly) * 1/2 onion, chopped. * 1 T sugar * Salt and pepper * 1 T fish sauce * 1/2 pound coarse unsweetened coconut chips (Trader Joe's has them) **METHOD** * Cut 1 lb fatty pork (shoulder or belly) into 1-2" cubes. * Mix with salt (to taste), fish sauce (2 t), black pepper (whole or ground, 1/2 to 1 t, to taste), and finely chopped onion (1/4 onion). * Let pork marinate for at least 15 minutes to an hour. * Make caramel sauce by gently heating 1 T sugar in pan, until liquefied and browning, being careful not to burn. * Add 1 cup water to caramel sauce, mix. * add marinated meat to and 1/2 pound coarse unsweetened coconut chips (Trader Joe's has them) to caramel sauce, mix. * Add more water if needed, enough to cover meat. * Simmer for 30 minutes or more until meat is tender. Served over mixed white and brown rice, accompanied by fresh pickled mustard
