=== Rosemary Olive Oil Pound Cake === Preheat to 375˙ **INGREDIENTS:** * 1 c butter * 1 c good olive oil * 2 c sugar + 2 tblsp sugar * zest of one lemon (preferably Meyer) * 6 branches rosemary, finely chopped * 10 eggs, separated * 1/2 c white wine * 1 tsp salt * 1 tsp tartar * 4 c sifted flour **DIRECTIONS:** * Mix together butter, oil & 1 1/4c sugar * Add egg yolks, one at a time * Meanwhile, mix egg whites and salt until stiff, add tartar, add remaining sugar, 1 tblsp at a time until VERY stiff * Combine rosemary & 2 tblsp sugar * Fold egg whites into remaining flour into butter mixture * Fold in zest * Turn into pan/s, then sprinkle with mixture of rosemary and sugar * After one hour, drizzle 1 tblsp olive oil over the top of the loaf **Bake 1 1/2 hrs total**
