==== Steamed Spareribs with Black Bean Sauce ==== * 2 pounds small pork spareribs, chopped into 1-inch pieces (ask your butcher to prepare them) * 1 teaspoon salt * 1 tablespoon sugar * 2 teaspoons black bean sauce * 2 garlic cloves, finely chopped * 2 teaspoons cornstarch * 2 long fresh chilies (1 red and 1 green), finely sliced - In a large bowl, mix the rib pieces with the rest of the ingredients, making sure each piece is coated with the mixture. - Divide the mixture between four to six small serving bowls. - Using your largest steamer (or your largest pan with enough room for all the bowls of ribs), steam the ribs in their bowls for 20-25 minutes and serve.
