Cut 1 lb fatty pork (shoulder or belly) into 1-2“ cubes.
Mix with salt (to taste), fish sauce (2 t), black pepper (whole or ground, 1/2 to 1 t, to taste), and finely chopped onion (1/4 onion).
Let pork marinate for at least 15 minutes to an hour.
Make caramel sauce by gently heating 1 T sugar in pan, until liquefied and browning, being careful not to burn.
Add 1 cup water to caramel sauce, mix.
add marinated meat to and 1/2 pound coarse unsweetened coconut chips (Trader Joe's has them) to caramel sauce, mix.
Add more water if needed, enough to cover meat.
Simmer for 30 minutes or more until meat is tender.
