1 bunch kale, large stems discarded, leaves finely chopped

1 tablespoon apple cider vinegar
1 apple, diced
1/3 cup feta cheese, crumbled sub goat or blue cheese
1/4 cup currants, sub dried cranberries, works fine with fewer
2 tblsp cup toasted pine nuts, sub chopped pecans or walnuts or pepitas
