2 pounds small pork spareribs, chopped into 1-inch pieces (ask your butcher to prepare them)
1 teaspoon salt
1 tablespoon sugar
2 teaspoons black bean sauce
2 garlic cloves, finely chopped
2 teaspoons cornstarch
2 long fresh chilies (1 red and 1 green), finely sliced
In a large bowl, mix the rib pieces with the rest of the ingredients, making sure each piece is coated with the mixture.
Divide the mixture between four to six small serving bowls.
Using your largest steamer (or your largest pan with enough room for all the bowls of ribs), steam the ribs in their bowls for 20-25 minutes and serve.
