Braised pork with coconut and pepper

INGREDIENTS
- 1 lb fatty pork (shoulder or belly)
- 1/2 onion, chopped.
- 1 T sugar
- Salt and pepper
- 1 T fish sauce
- 1/2 pound coarse unsweetened coconut chips (Trader Joe's has them)
METHOD
- Cut 1 lb fatty pork (shoulder or belly) into 1-2“ cubes.
- Mix with salt (to taste), fish sauce (2 t), black pepper (whole or ground, 1/2 to 1 t, to taste), and finely chopped onion (1/4 onion).
- Let pork marinate for at least 15 minutes to an hour.
- Make caramel sauce by gently heating 1 T sugar in pan, until liquefied and browning, being careful not to burn.
- Add 1 cup water to caramel sauce, mix.
- add marinated meat to and 1/2 pound coarse unsweetened coconut chips (Trader Joe's has them) to caramel sauce, mix.
- Add more water if needed, enough to cover meat.
- Simmer for 30 minutes or more until meat is tender.
Served over mixed white and brown rice, accompanied by fresh pickled mustard
