Braised pork with coconut and pepper

INGREDIENTS

  • 1 lb fatty pork (shoulder or belly)
  • 1/2 onion, chopped.
  • 1 T sugar
  • Salt and pepper
  • 1 T fish sauce
  • 1/2 pound coarse unsweetened coconut chips (Trader Joe's has them)

METHOD

  • Cut 1 lb fatty pork (shoulder or belly) into 1-2“ cubes.
  • Mix with salt (to taste), fish sauce (2 t), black pepper (whole or ground, 1/2 to 1 t, to taste), and finely chopped onion (1/4 onion).
  • Let pork marinate for at least 15 minutes to an hour.
  • Make caramel sauce by gently heating 1 T sugar in pan, until liquefied and browning, being careful not to burn.
  • Add 1 cup water to caramel sauce, mix.
  • add marinated meat to and 1/2 pound coarse unsweetened coconut chips (Trader Joe's has them) to caramel sauce, mix.
  • Add more water if needed, enough to cover meat.
  • Simmer for 30 minutes or more until meat is tender.

Served over mixed white and brown rice, accompanied by fresh pickled mustard
