Chicken Veronique

Veronique = seedless green grapes

1 broiler chicken (this can also be done w chicken breasts) Cut in pieces. Halve a lemon, rub well with the cut side. Sprinkle with salt. Let dry on a rack.

Heat 1/3 ( can be done w half this, no problem), in a skillet until bubbly. Start sautéing some shallots in the fat. Brown chickens not the butter about 8-10 minutes, turning with tongs. Pour in 1/3 c cooking Sauternes, white vermouth or any dry white wine. Spoon over chicken.

Cover and set to simmer for 15-20 minutes, until chicken is tender.

About 3 minutes before the end of cooking, add a half cup of halved green grapes. Dash generously with paprika. Pass the sauce in a bowl.
