Corn pudding - Eileen Hoban

  • A can of creamed corn, plus some frozen or fresh corn, drained
  • 1 tblsp flour
  • 2 eggs well beaten
  • 3/4 c of milk
  • 1 tblsp sugar
  • 1 tsp salt
  • A dash of pepper
  • 3 tblsp melted butter
  • Paprika

Directions

Combine corn and flour, to beaten eggs, to which milk has been added.

Add remaining ingredients and pour into a greased casserole dish.

Sprinkle the top with paprika. Bake at 350F for an hour.

To double, double all of the ingredients except for milk. Only add 1 1/4 c.
