Crispy Black Eyed Peas a la Toups South
- Fresh peas, simmer to get them super soft
- Dehydrate in oven overnight, as low as you can go, ~12 hrs
- Deep fry
- Toss in cajun spice mixture
- Store in airtight container
Serve: salad w mustard vinaigrette and thin sliced radishes
GREAT condiment for a salad!
