Good curry for when you have lots of basil

Got lots of basil? Got lots of Thai basil?
- red curry paste
- extra ginger
- garlic
- thai basil
In a food processor, whir up all these ingredients with a small amount of coconut milk, and a smidge of sugar.
Put in wok with hot oil and start to cook until it gets daeng-daeng (shows the red of the curry on floating on the top of the oil. Add:
- onions cut up small
- pork cut up small
- whatever veggies you have to make it tasty and colorful, cut up bite sized
- a little more coconut milk so you have extra sauce
- some fish sauce
- smidge of sugar if its too salty or hot
