Good curry for when you have lots of basil

Got lots of basil? Got lots of Thai basil?

  • red curry paste
  • extra ginger
  • garlic
  • thai basil

In a food processor, whir up all these ingredients with a small amount of coconut milk, and a smidge of sugar.

Put in wok with hot oil and start to cook until it gets daeng-daeng (shows the red of the curry on floating on the top of the oil. Add:

  • onions cut up small
  • pork cut up small
  • whatever veggies you have to make it tasty and colorful, cut up bite sized
  • a little more coconut milk so you have extra sauce
  • some fish sauce
  • smidge of sugar if its too salty or hot
