Ground pork with curry paste and bamboo shoots

- 2 tablespoons oil
- 2 garlic cloves, finely chopped
- 1 tablespoon red curry paste
- ½ teaspoon ground turmeric
- 6 ounces ground pork (about 3/4 cup)
- 4 ounces bamboo shoots, finely sliced (about 1 cup)
- 1 tablespoon fish sauce
- I tablespoon light soy sauce
- 1 teaspoon sugar
- 5 fresh Kaffir lime leaves, rolled up into a thin tube and finely sliced
- In a frying pan, heat the oil and fry the garlic until golden brown.
- Add the curry paste, turmeric, and ground pork and stir-fry until the meat is cooked through.
- Add the bamboo shoots, fish sauce, light soy sauce, and sugar and mix thoroughly.
- At the last moment, stir in the Kaffir lime leaves, turn onto a serving dish, and serve.
