'Healthier' Banana Bread
preheat over to 350 degrees F
sift together:
1 c all purpose flour 1 c whole wheat flour 1 tsp baking soda 1/2 tsp salt
cream together in a large bowl:
1/4 c butter + 1/2 c unsweetened apple sauce 1/2 c granulated sugar 2 eggs
mix together in a separate, smaller bowl:
1 c mashed overripe bananas (two is usually enough) 1/3 c milk 1 tsp lemon juice (about half a lemon. Vinegar will do in a pinch)
optional:
1/2 c chopped nuts - your choice: pecans, walnuts, etc. 1/2 c chocolate chips (if you really want decadence)
Into the butter mixture, add the dry ingredients in thirds, following each addition with a third of the banana mixture. Add nuts or chips, if you wish.
Pour into 'lavishly' buttered bake pans or muffin tins.
Bake for 1 hour for bread pan, for about 45-50 minutes for muffins, or until bread springs back when lightly touched in the center.
