Strawberry Meyer Lemon Marmalade Recipe
Serves/Yield: 5 half pints for the basic recipe
Ingredients
- 2 Meyer lemons (if using regular lemons, increase the strawberries by a pound)
- 2 pounds strawberries
- 2 cups granulated white sugar (if using regular lemons, add another cup of sugar)
Instructions
- Wash and dry lemons.
- Zest one of the lemons and set it aside. Get some juice from half of that one.
- Cut out the seeds of the other, then put the entire lemon into a food processor and pulverize.
- Gather up the reserved seeds and pith and place them into the center of a cheesecloth square.
- Wash strawberries and chop them well. Place them in a glass or plastic bowl and add the sugar. Stir to combine and cover. After about an hour…
- Pour the lemon mixture, a cup of water and any strawberry juice and sugar into a large, wide, non-reactive pan with the sachet included.
- Bring to a boil, simmer 10 minutes, let cool.
- When the lemon mixture is cool, add strawberries
