Lettuce Lamb Wraps
INGREDIENTS
- 1 lb ground lamb
- EVOO
- Onion, finely chopped,
- Salt & pepper
- Cinnamon
- 2-3 cloves garlic, finely chopped
- 1-2 tomatoes, finely chopped
- 1 large cucumber, finely chopped
- 1/2 c parsley, finely chopped
- 1/4 c hummus
- 1/2 c Fat free Greek yogurt
- Mint, finely chopped
- Pine nuts, roasted (Almonds can stand in for the pine nuts)
DIRECTIONS
Saute onions in EVOO
Add lamb and sauté, once it’s browned, add garlic, cinnamon.
Meanwhile, mix tomatoes, cucumbers, parsley.
Then add lamb mixture into the tomato mixture.
Mix together hummus, yogurt and mint, with some salt and a pepper as a dressing for wraps.
The whole mixture should look like a meaty tabouleh.
Spoon lamb mixture into lettuce leaves, top with dressing, sprinkle mint and pine nuts over the top.
