Marinade for light fish such as Mahi Mahi

  • Juice of one lime
  • clove or two of minced garlic
  • Tablespoon or more minced ginger (from a jar OK)
  • Tablespoon soy sauce
  • Tablespoon high flash point oil (sunflower or grapeseed)
  • herbs to taste, possibly:
    • mint
    • cilanthro
    • basil
