Marinade for light fish such as Mahi Mahi
- Juice of one lime
- clove or two of minced garlic
- Tablespoon or more minced ginger (from a jar OK)
- Tablespoon soy sauce
- Tablespoon high flash point oil (sunflower or grapeseed)
- herbs to taste, possibly:
- mint
- cilanthro
- basil
