Mocha Frosting a la Ghirardelli
Ingredients:
- 2 tsp instant coffee
- 2 Tbsp boiling water
- 4 oz Ghirardelli unsweetened chocolate, melted in double boiler
- 2/3 c butter
- 2 c confectioners sugar (have more on hand as needed)
- 1/3 c whole milk
- 2 tsp Kahlua, vanilla will do too in a pinch
Instructions:
Dissolve the instant coffee in boiling water
Stir into melted chocolate and set aside off the heat (this is esp important in warmer weather)
In a large mixing bowl, beat butter until fluffy
Gradually add the confectioner's sugar, milk and liquor, mixing until smooth
Add the melted chocolate and mix until well combined.
