Mocha Frosting a la Ghirardelli

Ingredients:

  • 2 tsp instant coffee
  • 2 Tbsp boiling water
  • 4 oz Ghirardelli unsweetened chocolate, melted in double boiler
  • 2/3 c butter
  • 2 c confectioners sugar (have more on hand as needed)
  • 1/3 c whole milk
  • 2 tsp Kahlua, vanilla will do too in a pinch

Instructions:

Dissolve the instant coffee in boiling water

Stir into melted chocolate and set aside off the heat (this is esp important in warmer weather)

In a large mixing bowl, beat butter until fluffy

Gradually add the confectioner's sugar, milk and liquor, mixing until smooth

Add the melted chocolate and mix until well combined.
