Pound Cake (no leavening)

Preheat to 325˙

INGREDIENTS:

  • 2 c butter
  • 2 c sugar
  • 10 eggs, separated
  • zest of one lemon (preferably Meyer)
  • 1 tsp salt
  • 1 tsp tartar
  • 4 c sifted flour

DIRECTIONS:

  • Mix together butter, 1 1/4c sugar
  • Add egg yolks, one at a time
  • Meanwhile, mix egg whites, tartar and salt until stiff, add remaining sugar, 1 tblsp at a time until VERY stiff
  • Combine lemon zest into flour mixture
  • Fold egg whites in remaining flour into butter mixture

Bake 1 1/2 hrs
