Pound Cake (no leavening)
Preheat to 325˙
INGREDIENTS:
- 2 c butter
- 2 c sugar
- 10 eggs, separated
- zest of one lemon (preferably Meyer)
- 1 tsp salt
- 1 tsp tartar
- 4 c sifted flour
DIRECTIONS:
- Mix together butter, 1 1/4c sugar
- Add egg yolks, one at a time
- Meanwhile, mix egg whites, tartar and salt until stiff, add remaining sugar, 1 tblsp at a time until VERY stiff
- Combine lemon zest into flour mixture
- Fold egg whites in remaining flour into butter mixture
Bake 1 1/2 hrs
