Scallops with Vegetables & Oyster Sauce

  • 2 tablespoons oil
  • 2 garlic cloves, finely chopped
  • 8 scallops, shelled
  • 4-6 cobs of baby corn, quartered
  • 2 ounces broccoli, chopped into small florets (about 1 heaping cup)
  • 2 ounces celery, finely sliced (about 1½3/4 cup)
  • 2 ounces carrots, julienned (about /3-½ cup)
  • 2 tablespoons oyster sauce
  • 1/2 teaspoon sugar
  • Ground white pepper, to taste
  1. In a frying pan, heat the oil and fry the garlic until golden brown.
  2. Add the scallops and stir-fry briefly, then add all the other ingredients one at a time, except the pepper, stirring well between each addition.
  3. Sprinkle with the pepper and serve.
