Ingredients

  • ½ cup Sodium-free or Low-sodium Chicken or Vegetable Broth
  • ¼ cup Mirin *1
  • ½ cup Soy Sauce
  • 2 Tbsp Sake
  • 1 tsp Brown Sugar
  • 1 tsp Rice Wine Vinegar
  • 1 inch piece Ginger, peeled and smashed
  • 1 clove Garlic, peeled and smashed
  • 1 Scallion, chopped

Instructions

  1. Bring all the ingredients to simmer in a saucepan.
  2. Simmer the tare until it reduces to ½ cup, about 25 minutes.
  3. Strain the solids and let the tare cool. Store in an airtight container in the refrigerator for up to two weeks.

Recipe Notes

*1 Mirin can be substituted with Sake and Sugar, 4:1 ratio
