Steamed Spareribs with Black Bean Sauce
- 2 pounds small pork spareribs, chopped into 1-inch pieces (ask your butcher to prepare them)
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 teaspoons black bean sauce
- 2 garlic cloves, finely chopped
- 2 teaspoons cornstarch
- 2 long fresh chilies (1 red and 1 green), finely sliced
- In a large bowl, mix the rib pieces with the rest of the ingredients, making sure each piece is coated with the mixture.
- Divide the mixture between four to six small serving bowls.
- Using your largest steamer (or your largest pan with enough room for all the bowls of ribs), steam the ribs in their bowls for 20-25 minutes and serve.
