Strawberry Cake/ cupcakes

Ingredients:

  • 2 cups sugar
  • 1 (3 ounce) package strawberry flavored Jello-O
  • 1 cup butter, room temperature
  • 4 eggs, room temperature
  • 2¾ cups cake flour
  • 2 tsp baking powder
  • 1 cup milk, room temperature
  • 1 tbsp framboise
  • ½ cup strawberry puree

Instructions:

  Preheat oven to 325*F degrees. Line cupcake pans with liners and set aside.
  
  In a medium bowl, sift together the dry ingredients and set aside.
  
  In a large bowl, beat butter with sugar and jello until creamy. Add eggs one at a time. Beat for 3 minutes.
  
  Add ⅓ of the dry ingredients and then add the rest in ⅓ increments alternatively with the milk. Mix until combined. Add in framboise and strawberry puree.
  
  Fill each cupcake liner ⅔ of the way up. Bake for 18-20 minutes, or until toothpick inserted into cake comes out clean. 
  
  Let sit for 5 minutes before removing to a cooling rack to cool completely before frosting. 
  
  Use the Mocha Frosting that's next in the wiki as the frosting. Or just chocolate frosting will do too.
