Sweet Potato Fries - Mark Bittman
Ingredients
All measures approximate. *
- Sweet Potatoes, Peeled - about 6 or 2 pounds
- 2 tablespoons Olive Oil
- 1 tsp Garlic Powder
- 1 tsp Paprika, preferrably smoked
- 1 tsp salt
- 1/2 tsp black pepper
Cooking
- Preheat Oven to 400
- Optionally Peel the sweet potatoes
- Cut into Fries, 1/4“ to 1/2” wide, 3 inches long
- Toss fries with oil
- Mix spices, toss fries with spices
- Bake until brown and crisp on the bottom, about 15 minutes
- Flip fries, and cook until the other side is crisp, about 10 minutes
Notes
Uniformity of fries matters. thinner crips faster
cook only a single layer on the baking sheet
Single tray only in the oven is better
Possibly increase temperature to 425
Some say rinse and then try the fries before coating with oil to remove some starch
