recipes:thai_basil_pesto

This came from the interwebs when I had an abundance of Thai basil. It's an improv and it should be taken as such:

Ingredients (whatever you have on hand):

Thai basil, mint, cilantro, fish sauce, soy sauce, miso, veggie oil (sesame oil works BEST), peanuts or peanut butter, lime juice, chilis

Put as much of each as you want in a blender, about equal parts of the salty (miso/soy/fish sauce) and the lime juice and peanut butter. Taste it to find that balance between salty, acid (lime juice) and hot (from the chilis).

Drizzle over noodles (we used rice noodles, they could be hot or cold), crunchy veggies (cukes, tomatoes, Asian pear) and protein (chicken breast, grilled shrimp, strips of beef).

It's a bowl licker!!

Freeze the leftovers!
